These simple little pancakes are a game changer if you are new to the paleo game and are sick of eating eggs. This recipe is so incredibly simple and super yummy! It is a blank canvas for those who are looking for a creative new meal to throw in the mix of meat and veggies. And it is 100% only TWO ingredients. So lets get into it…
All you need is:
- 1 ripe banana
- 2 eggs
And that all folks! You mash the banana with either a fork for a clumpy pancakes or I like to use my little nutribullet to get a super smooth pancake with no lumps. You mash the banana and add the two eggs and you cook them in your choice of oil over med-high heat until you see bubbles and then flip until the other side is brown. The one tip I want to throw in there is that to cook the cakes evenly use a lid and don’t give up, it takes some practice to master the perfect cake. One banana and 2 eggs makes about 3 medium size pancakes and if you want to make more its as easy as adding a 1 banana: 2egg ratio to get 3 medium pancakes (easy remember 1:2=3). Remember there is no leavening or structure because is does not have any type of flour so the batter will be a little runny and flipping the pancakes does take practice. They are naturally sweet and I love to throw a healthy heap or cinnamon in my “batter” and then cover it in berries. What is there not to love about a breakfast comfort food that wont send you into a diabetic coma. And what is even better on top of these paleo compliant babies is they are super frugal I mean you can make a bunch of pancakes from a bundle of bananas and a dozen eggs.
